4 Lampuki cutlets
1 Small can tomatoes,chopped
2 tablespoons capers
1 clove garlic,crushed
6 black olives,pitted
Few fresh mint sprigs
1 teaspoon olive oil
50ml water
Salt and Pepper

Method

1)Place the fish cutlets in a microwave dish
2)Cover fish with chopped tomatoes,capers,garlic,mint and chopped olives
3)Sprinkle with oil,salt and pepper add water.
4)Cover dish with microwave lid.Microave at 800w for about 10 minutes
cook for a few more minutes if necessary.


Serve warm with steamed
or boiled vegetables
